SPANISH EGGS

 

Spanish Baked Eggs A quick and tasty dish which can be enjoyed at any time of the day.  Serves 2.

Ingredients:
1 tin of chopped tomatoes
200g of chorizo sausage
2 peppers (any colour)
1 large onion
3 cloves of garlic
1 tin of mixed beans
4 eggs (preferably organic)
Olive oil (good quality)

 

Method:

Pre heat oven to 180C.
Chop up onion and fry with olive oil for about 3 – 4 minutes.
Chop up the chorizo sausage into bite size chunks and add to pan, cook for about 4 minutes.
Add the chopped tomatoes, garlic, peppers & mixed beans, cook for a further 20 minutes and season to taste, place in an oven proof dish.

Crack eggs and place on top of the mixture and then place in oven and cook for about 5 – 10 minutes.

To complement the dish I suggest getting a nice bread to soak up all the sauce….mmmm!
